Recipe for 750 grams of Chocolate Ice Cream

  • 500 ml water
  • 120 g sugar
  • 40 g honey
  • 30 g glucose syrup
  • 2 g locust bean gum
  • 150 g dark chocolate (in drops or pieces)

Preparation

In a saucepan, combine the water, sugar, honey, glucose syrup, and locust bean gum. Heat the mixture until it is almost boiling and thoroughly blend with an immersion blender until emulsified.

Remove the pan from the heat, add the dark chocolate (in drops or pieces), and blend again until the mixture is completely smooth and homogeneous.

Allow the mixture to cool completely.

Pour the mixture into your ice cream machine and churn until the sorbet reaches the desired consistency.
